In the United States it wasn’t until the late 18th century that establishments serving meals without also providing lodging started popping up. It wasn’t until the 19th century that these places began to be called restaurants. Now, the restaurant industry pulls in over $600 billion dollars every year, offering up everything from the ubiquitous fast food to rustic home cooking to fanciful molecular gastronomy, which sometimes barely resembles food. While larger operations and chain restaurants may have positions ranging from Service Manager to Purchasing Agent, smaller locales may only have a handful of staff members who take on a multitude of important roles.
